Recipe Peanuts Caramel Cookies low-carb keto gluten-free

Cookies with peanuts and caramel flavour from our basic cookie dough! Just 1g net carbs per piece!

Basic cookie dough

  • 100 g Dr. Almond Almond Dough CLASSIC
  • 130 g butter (melted)
  • 1 egg
  • 5 g Dr. Almond Low Carb Sweetener Cristalline

You’ll also need

  • 60 g peanuts (chopped)
  • 2 g coarse sea salt
  • 11 drops Pure Flavour Caramel

For sprinkling and baking

  • some Dr. Almond Caramel Dream
  • Master Class Cookie Tray
  1. Mix all ingredients (except caramel dream) to make a dough. Form into a roll, wrap into cling film and allow to rest in the fridge for 2 hours.
  2. Cut off slices from the roll and place on a baking tray. Smoothly flatten them on the tray and bake at 170° C (fan) for 11 minutes.
  3. Let them cool down a bit, carefully turn them around and bake again for another 10 minutes at 170° C.
  4. Then turn them around once more, sprinkle with caramel dream and bake again at 180° C for 4 minutes. Allow to cool off on a wire rack.
  5. I turn the cookies during baking so that they won’t get too dark on the surface.
  6. P.S: Quantity may vary depending on the roll thickness and how thick the slices are you cut off – please adjust baking time accordingly!
