BAKING MIX FOR LOW-CARB AND GLUTEN FREE PROTEIN PASTRY
A sweet, soft almond dough to create delicious Mini-Berliner in just a few minutes by frying. Can optionally be prepared with yeast. No fryer needed – fill a pan with fat (1 – 2 cm high) and get started!
IMPORTANT! The fat should have a maximum temperature of 160 °C!
TASTE: mild, sweet, deliciously juicy, like a classical doughnut
For the preparation with yeast you need additionally (NOT INCLUDED IN PRODUCT!) 1 packet of dry yeast or ½ cube fresh yeast and ½ TSP honey or sugar to activate the yeast. The small amount of carbohydrates is completely digested by the yeast.
After frying you can sprinkle the Mini-Berliner with powdered erythritol (NOT INCLUDED IN PRODUCT!) or fill with a low-carb fruit spread.
INGREDIENTS: Almond flour, free-range egg white powder, psyllium seed husks, citrus fiber. Contains less than 2 %: rising agent sodium hydrogen carbonate, acidifiers natural gluconolactone and potassium tartrate, rock salt, sweeteners sodium cyclamate and sodium saccharin, antioxidant ascorbic acid (vitamin C). May contain traces of other nuts, oilseeds, peanuts and shell parts.

PREPARATION (in a pan or fryer):
PREPARATION WITHOUT YEAST from 200 g baking mix:
1.) Pour 250 ml water into a mixing bowl.
2.) While stirring pour in the baking mix (200 g) and continue stirring for approx. 1 min.
3.) Shape 15 – 20 small buns with wet hands (approx. 1 cm thick) and let them rest for 30 min without covering.
4.) Heat up fat (we recommend coconut oil) in a pan (at least 2 cm high) or in a fryer on medium heat. The temperature of the fat should not exceed 160°C at any time! Fry the small buns in portions for approx.6 – 8 min while turning several times.
Enjoy warm or cold. Optionally sprinkle with erythritol powder and/or fill with Dr. Almond low-carb fruit spread.
PREPARATION WITH YEAST (not included in product!) from 200 g baking mix:
You need additionally:
• 1 packet of dry yeast or 1/2 cube fresh yeast
• 1/2 TSP honey or sugar to activate the yeast
PREPARATION WITHOUT YEAST from 200 g baking mix:
Dissolve 1 packet of dry yeast or 1/2 cube fresh yeast with 1/2 TSP honey or sugar in 250 ml warm water (max. 40 °C) and leave it covered for 30 min until the yeast forms a foam. Add the baking mix and follow the recipe above with step 2.). The buns turn out darker with yeast.
