BAKING MIX FOR CARBOHYDRATE REDUCED & GLUTEN FREE PROTEIN PASTRY WITH SWEETENERS
More than 90 % less carbohydrates than regular pastry!
Heavenly tender cinnamon stars with almonds, hazelnuts and walnuts, refined with aromatic cinnamon.
INGREDIENTS: Almond flour*, walnut flour*, hazelnut flour*, golden flax seed flour*, citrus fiber, bamboo fiber, cinnamon (3 %). Contains less than 2 %: rock salt, flavouring vanillin, sweeteners sodium cyclamate
and sodium saccharin, antioxidant ascorbic acid (Vitamin C). * = deoiled.
May contain traces of shell parts, eggs, other nuts, oilseeds and peanuts.
PREPARATION FROM 100 g BAKING MIX
(1/4 bag, for approx. 60 cookies):
You need additionally per 100 g baking mix:
o 2 eggs Size M (100 g, preferably cold)
o 150 g butter
o optional: Erythritol powder for dusting
1.) Melt butter (max. 35 °C) and mix well with 100 g baking mix.
2.) Add the eggs, stir until smooth (approx. 5 min) and refrigerate for at least 2 hours.
3.) Preheat oven to 160 °C. Roll out the cold dough on baking paper (Tip: roll out under cling film since the dough is quite sticky), cut out little stars with a cutter and place onto a baking tray covered with baking paper. Alternatively: Fill the dough into silicone moulds and bake in the moulds (recommended).
4.) Bake at 160 °C for approx. 10 – 12 min in a convection oven or approx. 12 – 15 min without convection.
Important: The pastry already has the ideal consistency 2 – 3 hours after baking! It should always be prepared fresh and stored for no longer than 5 days, as it contains no sugar as a preservative.
It can be frozen for at least 6 months. After defrosting, briefly bake or toast it, so it tastes like freshly baked again.
