Instructions: How to make low-carb pasta from scratch by hand (without machine) gluten-free

Tagliatelle pasta and lasagna sheets can be easily made by hand with our Pasta Magic baking mix and without using a pasta maker. All you need is a rolling pin and our bamboo fiber for dusting the dough.

What you need:

  • 200g Almond Pasta Magic CLASSICO or RUSTICALE
  • 1 – 2 Tbsp Dr. Almond Bamboo Fiber for rolling the dough
  • Optionally: 1/2 teaspoon salt (dissolve in water when making the dough)

Combine 200g dry mix with 200ml water and knead until you get a smooth dough. Divide the dough into several portions, dust with bamboo fiber and roll out on a slightly dusted work surface. Flip over repeatedly and dust again until you get the desired thickness (we recommend: max. 1 mm). Then cut into strips the size you like.

Here’s a little trick how to easily cut tagliatelle into thin strips: roll up the dough into several layers, starting from one side (always fold the ends of the dough into the middle), then begin cutting the roll into thin strips. Weave your hands through the fold of the pasta and your noodles are ready.

 

For tagliatelle:

Throw the fresh pasta in salted water (minimum 2 liters) and allow to simmer at medium heat until you get the consistency you desire, stir now and again. The thinner the pasta, the shorter the cooking time! We strongly recommend to eat one noodle and see if it’s done so that you get just the right consistency.

For lasagna sheets:

NO need to precook the lasagne sheets! Simply finish up your lasagna as usual and enjoy!
