Carbohydrate reduced fat-based ready mix for homemade chocolate & glazes with sweeteners
More than 92 % less carbohydrates than regular white chocolate.
INGREDIENTS: Cocoa butter (freeze-dried), cream powder, erythritol.
Contains less than 2 %: Bourbon vanilla, sweeteners sodium cyclamate and sodium saccharin, natural flavouring (cream).
PREPARATION OF HOMEMADE CHOCOLATES:
Melting – Pouring – Cooling – DONE!
1.) Melt the desired amount of Chocolate Magic in a water bath to no more than 40 °C.
2.) Pour into a chocolate mould or onto a plate covered with aluminum foil. For glazes coat the pastry with the liquid chocolate.
3.) Refrigerate until set.
TIPP: For chocolate with a crisp bite, and a shiny surface, the chocolate mass needs to be tempered:
Option 1: Cool the mass to below 27 °C and carefully warm up again to 32 – 34 °C. Then follow Step 2.).
Option 2: Melt only 2/3 of the desired amount of Chocolate Magic and remove from water bath. Add the remaining amount at below 40 °C and stir in thoroughly until fully melted. Then follow Step 2.)

I mix this product with my 85% cocoa Swiss chocolate in order to reduce the sugar content and the bitterness of that chocolate. Recently I mixed it with fruit powders which gave it an interesting flavour and it is delicious when you add freeze dried raspberries. It is very versatile.
