Recipe Strawberry Lasagna low-carb gluten-free

Sweet pancake lasagna with strawberries, mascarpone cream and strawberry purée! A sweet dream to enjoy with your coffee or as a dessert!

For the pancakes (6 pieces)

  • 80 g Dr. Almond Pancake & Waffle Mix
  • 320 g milk
  • 4 eggs medium
  • 8 g Dr. Almond Low Carb Sweetener Cristalline
  • Dr. Almond Ghee (or other fat for frying the pancakes)

For the cream

  • 500 g mascarpone cheese
  • 250 g curd cheese (20% fat)
  • 200 g whipped cream
  • 8 g Dr. Almond Low Carb Sweetener Cristalline

For the strawberry purée

  • 250 g strawberries
  • 10 ml raspberry brandy (optional)
  • 2 Tbsp lemon juice

Others

  • 500 g strawberries
  • little bit baking cocoa for dusting
  1. For the pancakes, mix the pancake & waffle mix with milk and sweetener. Then mix in the eggs.
  2. Put some clarified butter (ghee) in a frying pan (size approx. 24cm) and heat it up at medium heat. Fill 1/6 of the pancake batter in the middle of the pan and gently spread further with a spatula. Bake slowly until the batter begins to bubble. Flip the pancakes and bake until done. I got 6 pancakes from the batter.
  3. Let cool the pancakes.
  4. For the mascarpone cream, mix curd cheese and sweetener. Whip the cream until stiff and slowly fold it in. Leave in a cool place. If you want to save calories, you can also prepare the cream e. g. with skyr and curd cheese – however, you should add some gelatine then as binding agent.
  5. For the purée, mix 250g strawberries with lemon juice and raspberry brandy to a smooth purée.
  6. Now let’s get started on layering the lasagna. You’ll need a lasagna dish or a glass baking dish sized approx. 25 x 20 cm. Start the first layer with pancakes. Lightly spread the strawberry purée over the pancakes, then place the chopped strawberries on top and add a layer of cream. Add another layer of pancakes, strawberry purée and so on. Finish with a covering of pancakes and spread some cream on top. I made 5 layers and used one single pancake to fill the edges of the dish. (see pictures below). Sprinkle cocoa powder all over the top as you like or garnish with a layer of strawberries!
  7. Chill the lasagna in the fridge for at least 2 hours and let soak! Perfectly goes with coffee or just enjoy as a dessert! It tastes heavenly!
